Hi-Tech Catering At The Royal Armouries And Savile's Hall…
If you've ever struggled to get Christmas dinner on the table for ten or twenty people, then you may wonder how Savile's team of chefs cope with serving hundreds or even thousands of hot meals at the same time.
The answer is some rather clever gadgetry: the Chillogen Banquet Trolleys from Moffat Catering Equipment. British designed and manufactured, the trolleys help Savile's chefs produce top quality food - and they make life easier.
The food is cooked in advance of the event when the kitchens are quiet, then put on plates which are loaded into the Chillogen trolleys (they'll hold up to 90 plates each). The trolleys then 'rapid-chill' the food down and, once it's safely chilled, the trolley switches to 'fridge' mode, storing the food in prime quality, till its needed.
Then comes the really clever bit: an hour or so before the banquet, the 'fridge' trolley switches into an 'oven' trolley, heating up the food to the perfect temperature, holding it ready for the waiters to serve.
Moffat won the prestigious FCSI (Foodservice Consultants Society International) 'Manufacturer of the Year' award in 2006. If you'd like to know more, visit the Moffat website www.ermoffat.co.uk or watch the Chillogen video |
